Just like learning the difference in the images produced by SI in relation to 2D sonar, there is a learing curve involved between what SI shows and 360 shows. Just takes practice.
The benefit of 360 is you can remain motionless and see all the way around the boat in real time. It does the scanning for you.

I had the Sensitivity set a little too high for the depth as I had just moved from another location with a depth twice as much.
You should have no problem seeing fish as large as your picture, which direction to cast to it, and how far to cast.
